How do people put there Halo 3 videos on youtube. Do they use a Recording program. or how do they even get it on the computer

They connect their XBOX 360 to their PC (The video AV cables), and buy WIN TV (it's basically a DVR for PC). After downloading the proper WIN TV software, it's possible to use your PC as a television record videos from your 360 directly to your hard drive.
