if i reserved a copy of halo 3 ODST a while ago, do i get one?

Lets say i reserved halo 3 odst 3 weeks ago and put 30$ into it, does that mean tomorrow i have a copy waiting for me NO MATTER WHAT? like can they be sold out? im going at 6:30 PM tomorrow

Well, from my experience, reserving games was kinda like a first come first serve. You'd likely get it before someone who reserved it last week. But usually they call you or send you an email telling you that it'll be here on this date. But I'd say that you'll probably get it today or by the end of this month.

since you put down the deposit down it is guaranteed that they will have a copy waiting for you

If you reserve a copy the store is obligated to hold it for you being you already put down a deposit on it.

EDIT: When reserving a game you need to pick it up the day of release or they will be allowed to sell if it you don't pick it up within 24 hours.
