Holy shit, Halo 3 ODST looks sweet, but It's not out yet. Of the first 3 however, I would choose Halo 1.

Beings as I've never played Reach or ODST,I would have to say Halo 3,because its the only one for 360(between 1,2,3)so it obviously has the best graphics,and it is also the conclusion to the main series.
